2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, chilled and cubed

3/4 cup buttermilk, chilled

2 tablespoons honey

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

        In a separate bowl, mix the buttermilk and honey until well combined.

          Pour the buttermilk mixture into the flour-butter mixture. Stir gently with a fork until the dough just comes together, being careful not to overmix.

            Turn the dough out onto a lightly floured surface. Gently knead the dough 2-3 times just until smooth. Roll it out to about 1-inch thickness.

              Using a round biscuit cutter, cut out biscuits from the dough and place them on the prepared baking sheet. Gather any remaining dough, roll it out again, and cut out more biscuits.

                Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown on the top.

                  While the biscuits are baking, prepare a honey butter by whisking together 1/4 cup soft butter and 2 tablespoons honey in a small bowl.

                    Remove the biscuits from the oven and brush the tops with the honey butter while they are still warm.
