4 fillets of white fish (cod, halibut, or tilapia)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 (14-ounce) can diced tomatoes

1/4 cup black olives, pitted and sliced

2 tablespoons capers, rinsed and drained

1/2 teaspoon dried oregano

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

Juice of 1 lemon

Cooked pasta (spaghetti or linguine), for serving

Prepare the Fish: Rinse the fish fillets under cold water and pat dry with paper towels. Season both sides with salt and pepper. Set aside.

    Make the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant but not browned.

      Add Tomatoes: Pour in the diced tomatoes along with their juices, stirring well to combine. Allow the mixture to cook for about 5 minutes to thicken slightly.

        Add Olives and Capers: Stir in the black olives, capers, and dried oregano. Let the sauce simmer for another 3-4 minutes, stirring occasionally.

          Cook the Fish: Carefully place the seasoned fish fillets into the skillet, ensuring each piece is submerged in the sauce. Cover the skillet and cook for about 6-8 minutes, or until the fish is cooked through and flakes easily with a fork.
