8 slices of whole grain bread, cubed

1 pound breakfast sausage, crumbled

8 large eggs

2 cups milk

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

1 teaspoon dried thyme

1 cup diced bell peppers (red and green)

1 cup country-style gravy (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the crumbled sausage, cooking until browned and fully cooked. Remove from heat and set aside.

    In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, thyme, salt, and pepper until well combined.

      In a greased 9x13 inch baking dish, layer the cubed bread evenly across the bottom.

        Sprinkle the cooked sausage and diced bell peppers over the bread.

          Pour the egg mixture evenly over the top, ensuring it saturates the bread and sausage.

            Sprinkle shredded cheddar cheese over the top of the egg mixture.

              Cover the dish with plastic wrap or aluminum foil and refrigerate overnight to allow the flavors to meld.

                In the morning, preheat your oven to 350°F (175°C).

                  Remove the cover and bake the casserole for 40-45 minutes until the eggs are set and the top is golden brown.

                    While the casserole is baking, heat the country-style gravy in a saucepan over medium heat until warmed through.

                      Once the casserole is done, let it cool for a few minutes before slicing it into squares.
