4 ears of fresh corn, husked and kernels removed

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

1 medium potato, peeled and diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

1 cup crema or sour cream (for garnish)

1/4 cup crumbled queso fresco (for garnish)

1/4 cup fresh cilantro, chopped (for garnish)

Juice of 1 lime

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until translucent.

    Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

      Add the corn kernels to the pot and sauté for 3-4 minutes until they start to soften.

        Mix in the diced potato, smoked paprika, ground cumin, chili powder, salt, and pepper. Stir well to combine.

          Pour in the vegetable broth, bring the mixture to a boil, then reduce heat to a simmer. Cook for about 15-20 minutes, until the potatoes are tender.

            Using an immersion blender, blend the soup until creamy but still slightly chunky. If you don’t have an immersion blender, you can transfer half of the soup to a blender, blend, and then return it to the pot.

              Stir in the lime juice for a fresh, bright flavor.

                Taste and adjust seasoning if necessary.

                  Serve hot in bowls and garnish each serving with a drizzle of crema or sour cream, crumbled queso fresco, and chopped fresh cilantro.
