1 pre-made pizza crust (store-bought or homemade)

1 cup cooked corn kernels (fresh, frozen, or canned)

1 cup mozzarella cheese, shredded

½ cup cotija cheese, crumbled

1/4 cup mayonnaise

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1 jalapeño, thinly sliced (optional for heat)

Fresh cilantro, chopped for garnish

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up as well.

    Prepare the Corn Mixture: In a large bowl, combine the cooked corn, mayonnaise, lime juice, chili powder, smoked paprika, salt, and pepper. Mix well until the corn is evenly coated in the dressing.

      Assemble the Pizza: On a baking sheet or a pizza peel (if using a pizza stone), spread the pre-made pizza crust. Evenly distribute the shredded mozzarella cheese over the crust.

        Add the Corn Topping: Spoon the corn mixture over the mozzarella cheese, spreading it evenly. Make sure to distribute the mixture so every slice will have corn on it.

          Bake the Pizza: If using a pizza stone, slide the pizza onto the stone. If using a baking sheet, place it in the oven directly. Bake for about 10-12 minutes, or until the cheese is bubbly and the crust is golden brown.

            Finish the Pizza: Once out of the oven, sprinkle the crumbled cotija cheese and jalapeño slices (if using) on top. Garnish with fresh cilantro for added flavor and color.

              Slice & Serve: Allow the pizza to cool for a minute, then slice into wedges and serve warm.
