2 whole wheat English muffins, split in half

4 large eggs

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/2 cup cooked spinach, chopped

1/4 cup crumbled feta cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil for greasing

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Lightly grease a baking sheet with olive oil. Place the English muffin halves cut side up on the sheet.

      In a mixing bowl, crack the eggs and whisk them until fully blended. Season with garlic powder, oregano, salt, and pepper.

        Pour an equal amount of the egg mixture onto each English muffin half, making sure not to overfill.

          Scatter the chopped spinach and cherry tomato halves evenly over the muffins.

            Sprinkle mozzarella cheese generously on top, followed by a sprinkle of feta cheese.

              Place the baking sheet in the oven and bake for about 12-15 minutes, or until the egg is set and the cheese is bubbly and golden.

                Remove from the oven and let cool for a minute.

                  Garnish with fresh basil leaves if desired.
