1 tablespoon instant espresso powder

1 cup boiling water

1 teaspoon vanilla extract

1 cup granulated sugar

2 large eggs, room temperature

1 cup all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, melted

8 ounces mascarpone cheese, softened

1 cup heavy whipping cream

½ cup powdered sugar

2 tablespoons coffee liqueur (optional)

Cocoa powder, for dusting

Instructions
 

Prepare the Espresso: In a small bowl, combine instant espresso powder with boiling water and vanilla extract. Stir well until dissolved and let it cool completely.

    Make the Cake: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.

      Mix Wet Ingredients: In a separate bowl, beat granulated sugar and eggs together until light and fluffy. Slowly add the melted butter while continuing to mix.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the cooled espresso mixture. Mix until just combined.

          Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

            Prepare Mascarpone Filling: In a large bowl, whip heavy cream and powdered sugar until soft peaks form. Gently fold in the mascarpone cheese and coffee liqueur until fully combined and smooth.

              Assemble the Cake: Once the cakes are completely cooled, level the tops if necessary. Place one layer on a serving platter. Brush with half of the espresso mixture, then spread a generous layer of the mascarpone filling on top.

                Layer Again: Place the second cake layer on top. Repeat the espresso soaking and spread the remaining mascarpone filling on top and sides of the cake.

                  Chill and Dust: Refrigerate the cake for at least 4 hours (or overnight for best flavor). Before serving, dust the top with cocoa powder.

                    Serve: Slice and savor this elegant tiramisu layer cake with a side of coffee or dessert wine!
