Egg and Ham Breakfast Sandwich

2 slices whole grain bread

1 large egg

2 slices of ham (preferably honey or black forest)

1 slice cheddar cheese

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

1 cup fresh spinach leaves

Salt and pepper to taste

1 teaspoon olive oil

Instructions
 

In a small bowl, mix the mayonnaise and Dijon mustard together. Set aside.

    Heat the olive oil in a non-stick skillet over medium heat.

      Crack the egg into the skillet and season with salt and pepper. Cook for about 3-4 minutes until the whites are set but the yolk remains runny (or cook longer for a firmer yolk if desired).

        While the egg is cooking, in a separate pan, lightly toast the slices of bread until they reach your desired crunch.

          In the same or another skillet, heat the ham slices for about 1-2 minutes until warmed and slightly crispy.

            Assemble the sandwich: Spread the mayonnaise and mustard mixture on one slice of toasted bread.

              Layer on the spinach leaves, followed by the warm ham, the slice of cheddar cheese, and finally the sunny side-up egg on top.

                Place the second slice of toasted bread on top and press down gently.

                  Optionally, slice the sandwich in half for easy eating.
