1 pound ground turkey (or beef)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) enchilada sauce (red or green)

1 cup cooked quinoa or rice

1 cup diced bell peppers (mix of red and green)

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

2 cups shredded cheddar cheese

1/4 cup chopped fresh cilantro (for garnish)

1 avocado, diced (for serving)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, cook the ground turkey over medium heat until fully browned, breaking it apart with a wooden spoon (about 5-7 minutes).

      Add the diced bell peppers to the skillet and sauté for another 3-4 minutes until they begin to soften.

        Stir in the black beans, corn, enchilada sauce, cooked quinoa (or rice), chili powder, cumin, garlic powder, salt, and pepper. Mix well and let it simmer for 5 minutes.

          Transfer the mixture to a greased 9x13 baking dish, spreading it out evenly.

            Top the dish with shredded cheddar cheese, covering it completely.

              Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.

                Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro and serve topped with diced avocado.
