2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup whole milk

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract (for cream)

Prep the Strawberries: In a medium bowl, combine the sliced strawberries and granulated sugar. Gently toss and let them sit for about 30 minutes to macerate, releasing their juices.

    Make the Shortcake Biscuits: Preheat your oven to 425°F (220°C). In a large mixing bowl, whisk together the flour, baking powder, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

      Mix Dough: Pour in the milk and vanilla extract. Stir until just combined — be careful not to overmix. The dough should be slightly sticky.

        Shape and Bake: Turn the dough onto a floured surface and gently pat it into a rectangle about 1 inch thick. Cut out biscuits using a round cutter or the top of a glass. Place the biscuits on a parchment-lined baking sheet. Bake for 12-15 minutes, or until golden brown. Allow them to cool slightly.
