2 cups fresh strawberries, hulled and sliced

2 tablespoons honey or agave syrup

1 teaspoon vanilla extract

2 cups vanilla ice cream

2 cups sparkling water or lemon-lime soda

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium bowl, combine the sliced strawberries and honey (or agave syrup). Toss gently to coat the strawberries and allow them to macerate for about 15 minutes. This will draw out their juices and enhance their flavor.

    In four tall glasses, place a generous scoop of vanilla ice cream at the bottom.

      Once the strawberries have macerated, spoon a small amount of the strawberries and their juices over the ice cream in each glass.

        Slowly pour the sparkling water (or lemon-lime soda) over the ice cream and strawberries, filling the glass to the top. You should see a delightful fizz!
