1 cup granulated sugar

1/2 cup corn syrup

1/4 cup water

2 large egg whites

1/2 teaspoon vanilla extract

1 cup mini marshmallows

1 cup semisweet chocolate chips

1 tablespoon coconut oil (or vegetable oil)

1/2 teaspoon sea salt (optional)

Instructions
 

Prepare the pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later. Spray lightly with cooking spray.

    Make the nougat base: In a saucepan over medium heat, combine granulated sugar, corn syrup, and water. Stir until sugar is dissolved and bring to a boil without stirring. Let it simmer until it reaches a soft ball stage (about 238°F or 114°C), which should take around 5-7 minutes.

      Whip the egg whites: While the syrup is cooking, in a separate bowl, whip the egg whites using an electric mixer until soft peaks form. Gradually add the hot syrup to the egg whites while continuing to mix. Be careful as the syrup is hot. Whip on high until glossy and thick, about 5-7 minutes.

        Incorporate marshmallows: Add vanilla extract and mini marshmallows to the whipped mixture, stirring gently until well combined. Pour the mixture into the prepared baking dish and spread it out evenly. Allow it to set at room temperature for at least 30 minutes.

          Melt the chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

            Coat the nougat: Once the marshmallow layer has set, use the parchment to lift it out of the pan. Cut into squares. Dip each square into the melted chocolate and place them back on the parchment-lined sheet. If desired, sprinkle a small pinch of sea salt on top of the chocolate before it sets.

              Cool and set: Let the chocolate-covered Scotchmallows cool completely at room temperature or place them in the fridge for faster setting.
