1 box red velvet cake mix

2 large eggs

1/2 cup vegetable oil

1/2 cup water

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1/2 cup whipped topping (like Cool Whip)

1/4 cup chocolate chips (optional, for topping)

Red and white chocolate drizzles (for decoration, optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a mini muffin tray with paper liners or spray with non-stick cooking spray.

    In a large mixing bowl, combine the red velvet cake mix, eggs, vegetable oil, and water. Mix until well combined.

      Fill each mini muffin cup about 2/3 full with the red velvet batter. Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean. Let them cool completely in the tray or on a wire rack.

        While the cake bites are cooling, prepare the cheesecake filling. In another bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the whipped topping gently until well combined.

          Once the red velvet bites have cooled, carefully remove them from the tray. Use a small spoon or a piping bag to add a dollop of the cheesecake filling to the top of each red velvet cake bite.

            If desired, sprinkle the tops with chocolate chips or drizzle with melted red and white chocolate for extra decoration.

              Place the cheesecake bites in the refrigerator for at least 30 minutes to set the cheesecake filling before serving.
