8 oz pennette pasta

4 oz pancetta, diced

1 bunch asparagus, trimmed and cut into 2-inch pieces

2 cloves garlic, minced

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

2 tbsp olive oil

Salt and pepper, to taste

Zest of 1 lemon

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pennette pasta and cook according to package instructions until al dente. Reserve 1 cup of the pasta cooking water before draining the pasta.

    Sauté Pancetta: In a large skillet over medium heat, add the olive oil. Once hot, add the diced pancetta and cook until it's crispy and golden, about 5-7 minutes. Remove the pancetta from the pan and set aside, leaving the rendered fat in the skillet.

      Cook Asparagus: In the same skillet, add the asparagus pieces and sauté for 3-4 minutes until they are tender but still crisp. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Combine Ingredients: Return the pancetta to the skillet with the asparagus. Pour in the heavy cream and stir to combine. Allow it to simmer for 2-3 minutes to thicken slightly.

          Mix with Pasta: Add the drained pennette pasta to the skillet, tossing to combine everything well. If the mixture seems too dry, gradually add some reserved pasta cooking water until you reach your desired creaminess.

            Season: Stir in the grated Parmesan cheese, lemon zest, and season with salt and pepper to taste.

              Serve: Serve the pasta hot, garnished with fresh basil leaves if desired, and an extra sprinkle of Parmesan on top.
