8 oz (225 g) block of feta cheese

1/2 cup extra-virgin olive oil

2 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon crushed red pepper flakes

Zest of 1 lemon

Juice of 1 lemon

Fresh herbs (such as parsley, basil, or dill) chopped for garnish

Salt and pepper to taste

Instructions
 

Cut the block of feta cheese into 1-inch cubes and set aside in a medium mixing bowl.

    In a separate bowl, whisk together the olive oil, minced garlic, dried oregano, dried thyme, crushed red pepper flakes, lemon zest, lemon juice, salt, and pepper until all ingredients are well combined.

      Pour the marinade over the feta cheese cubes, making sure they are well coated.

        Carefully transfer the cheese and marinade into a clean sterilized jar or airtight container.

          Seal the jar and refrigerate for at least 2 hours, but ideally overnight, to allow the flavors to meld.

            When ready to serve, remove from the refrigerator and let it sit at room temperature for about 15 minutes.

              Garnish with freshly chopped herbs before serving.
