1 ¾ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

3 teaspoons baking powder

½ teaspoon salt

3 large eggs

½ cup whole milk

1 teaspoon vanilla extract

Zest of 2 lemons

⅓ cup fresh lemon juice

Powdered sugar (for dusting)

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper for easier removal.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes using an electric mixer.

      Add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract and lemon zest, stirring to combine.

        In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with the milk. Begin and end with the flour mixture for a smooth consistency.

          Stir in the fresh lemon juice until well combined. The batter will be slightly thick but pourable.

            Pour the batter into the prepared cake pan and smooth the top with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

                Once baked, let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

                  Once the cake is cooled, dust the top with powdered sugar before slicing and serving.
