1 pound ground beef

1 cup uncooked white rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes, drained

1 cup frozen peas and carrots mix

1 small onion, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

1/2 cup sour cream

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    In a large skillet over medium heat, brown the ground beef until fully cooked. Drain the excess fat.

      Add the diced onion and minced garlic to the skillet, sautéing until the onion is translucent.

        Stir in the uncooked rice, beef broth, diced tomatoes, frozen peas and carrots, Italian seasoning, salt, and black pepper. Bring the mixture to a simmer and cook for about 5 minutes, stirring occasionally.

          Remove the skillet from heat and fold in the sour cream until well combined.

            Transfer the mixture to the prepared baking dish. Spread it out evenly and cover with aluminum foil.

              Bake in the preheated oven for 30 minutes, then remove the foil and sprinkle the shredded cheddar cheese on top.

                Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Once done, remove it from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
