2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon oregano

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 can (15 oz) tomato sauce

1 cup vegetable broth

1 tablespoon apple cider vinegar

1 teaspoon sugar (optional, to balance acidity)

Instructions
 

In a medium saucepan, heat the olive oil over medium heat.

    Add the chopped onion and sauté for about 5 minutes, or until translucent and soft.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the chili powder, ground cumin, smoked paprika, oregano, salt, and black pepper to the pan. Stir well to coat the onions in the spices and allow them to cook for another minute.

          Pour in the tomato sauce and vegetable broth, stirring to combine all ingredients thoroughly.

            Bring the mixture to a simmer, then reduce the heat to low. Allow the sauce to simmer for about 15 minutes, stirring occasionally.

              If using, add the apple cider vinegar and sugar to the sauce, and stir well to incorporate. Taste and adjust seasoning if necessary.

                Once the sauce has thickened slightly, remove it from heat and let it cool for a few minutes before using.
