6 large buttery croissants, torn into bite-sized pieces

6 large eggs

1 cup whole milk

1 cup shredded Gruyère cheese

1/2 cup cooked bacon, chopped (or substitute with vegetables for a vegetarian option)

1 red bell pepper, diced

1 small onion, diced

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh chives for garnish

Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.

    In a large bowl, whisk together the eggs, milk, thyme, salt, and black pepper until well combined.

      In the prepared baking dish, layer the torn croissant pieces evenly across the bottom.

        Sprinkle the chopped bacon, diced bell pepper, and onion evenly over the croissants.
