8 oz (225g) linguine or spaghetti

8 oz (225g) chorizo sausage, sliced (fresh or cured)

1 tablespoon olive oil

4 cloves garlic, minced

1 small onion, diced

1 can (14 oz) diced tomatoes, with juices

1 teaspoon smoked paprika

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

1 cup heavy cream

1 cup spinach (fresh or frozen)

Grated Parmesan cheese for serving

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to the package instructions until al dente. Drain and set aside.

    Cook the Chorizo: In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook until browned and crispy, about 5-7 minutes. Use a slotted spoon to remove the chorizo and set aside, leaving the oil in the pan.

      Sauté Vegetables: In the same skillet, add the diced onion and garlic. Sauté for about 3-4 minutes until the onion is translucent.

        Add Tomatoes & Spices: Stir in the diced tomatoes (with their juices), smoked paprika, red pepper flakes, salt, and black pepper. Simmer for about 5 minutes, allowing the flavors to meld.

          Make it Creamy: Lower the heat and stir in the heavy cream, mixing well until combined. Let it simmer for another 2-3 minutes until slightly thickened.

            Combine: Add the cooked pasta and crispy chorizo back into the skillet, tossing to coat everything evenly in the sauce. If using spinach, stir it in and allow it to wilt for about 2 minutes.

              Serve: Divide the pasta among plates, top with grated Parmesan cheese, and garnish with fresh basil if desired. Serve immediately and enjoy!
