Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), drained

1/4 cup fresh basil leaves, torn

2 tablespoons balsamic glaze

1 tablespoon lemon juice

Instructions
 

Preheat the grill or a grill pan over medium-high heat.

    Rub the chicken breasts with olive oil and season both sides with salt and pepper.

      Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Once cooked, remove from the grill and let rest for a few minutes.

        While the chicken is resting, in a large mixing bowl, combine the halved cherry tomatoes, mozzarella balls, and torn basil leaves.

          In a small bowl, whisk together the balsamic glaze and lemon juice. Drizzle half of this mixture over the tomato and mozzarella salad, gently tossing to combine.

            Slice the grilled chicken into strips.

              Arrange the salad on a serving platter or individual plates, then top with the sliced chicken. Drizzle the remaining balsamic glaze mixture over the chicken and salad.

                Garnish with additional fresh basil leaves if desired.
