6 large eggs

1/2 cup milk

1 cup spinach, chopped

1/2 cup bell pepper, diced (any color)

1/2 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar or mozzarella)

1/4 cup cooked and crumbled bacon or sausage (optional)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Cooking spray or oil for greasing

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined. Add garlic powder, onion powder, salt, and pepper, and mix thoroughly.

      Add Vegetables and Protein: Fold in the chopped spinach, diced bell pepper, halved cherry tomatoes, and cooked bacon or sausage (if using) into the egg mixture. Stir until the vegetables and protein are evenly distributed.

        Fill Muffin Tin: Pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full. Sprinkle the shredded cheese evenly over the top of each muffin.

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg muffins are set and lightly golden on top.

            Cool and Serve: Once done, allow the muffins to cool for a few minutes in the pan. Carefully run a knife around the edges to help release them. Serve warm or store in an airtight container in the refrigerator.
