6 large eggs

1 cup milk

2 cups cubed day-old bread (croissants or ciabatta work great!)

1 cup diced bell peppers (red and green)

1 cup fresh spinach, roughly chopped

1 cup shredded cheddar cheese

½ cup diced onion

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika (optional for color)

Fresh herbs (like chives or parsley) for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

    In a large mixing bowl, whisk together the eggs and milk until well combined.

      Add garlic powder, salt, black pepper, and paprika (if using) to the egg mixture. Stir well to combine.

        In the greased baking dish, layer the cubed bread evenly across the bottom.

          Next, sprinkle the diced bell peppers, spinach, onion, and half of the shredded cheddar cheese over the bread.

            Pour the egg mixture evenly over the entire dish, ensuring all the bread is soaked.

              Top with the remaining cheddar cheese for a cheesy crust.

                Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

                  Remove the foil and bake for an additional 10-15 minutes, or until the casserole is set in the middle and the cheese is golden and bubbly.

                    Once done, allow it to cool for a few minutes before cutting into squares.
