1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 cup vanilla pudding mix (instant)

1/2 cup milk

1/2 cup semi-sweet chocolate chips

1 tablespoon coconut oil (for melting chocolate)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

        Add the egg and vanilla extract to the butter mixture, mixing well until fully combined.

          Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Don’t overmix.

            Scoop tablespoon-sized balls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let them cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

                In a separate bowl, prepare the vanilla pudding by combining the pudding mix and milk. Whisk until it thickens; then refrigerate for about 10 minutes.

                  Once the cookies are completely cooled, create a small indentation in the center of each cookie using your thumb or the back of a small spoon.

                    Fill the indentations with a dollop of the chilled vanilla pudding.

                      In a microwave-safe bowl, melt the semi-sweet chocolate chips with coconut oil in 30-second intervals, stirring in between until smooth.
