Easy Beef Enchilada Recipe

Ingredients
  

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) enchilada sauce

1 teaspoon ground cumin

1 teaspoon chili powder

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

8 flour tortillas (8-inch)

2 cups shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onions are soft, about 5-7 minutes. Drain any excess fat.

    Stir in the enchilada sauce, cumin, chili powder, black beans, and corn. Allow the mixture to simmer for about 5 minutes, letting the flavors meld together.

      Preheat your oven to 350°F (175°C).

        Lightly grease a 9x13 inch baking dish.

          Place about 1/4 cup of the beef mixture in the center of each tortilla. Sprinkle a tablespoon of cheese on top of the beef, then roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with all tortillas.

            Pour any remaining enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining cheese on top.

              Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.

                Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro.

                  Serve warm with dollops of sour cream on the side.
