12 oz penne pasta

1 lb smoked sausage (like andouille), sliced into rounds

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 tablespoon Cajun seasoning

1 teaspoon olive oil

Salt and pepper to taste

1 cup grated Parmesan cheese

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Start by cooking the penne pasta according to the package instructions until al dente. Drain and set aside.

    Brown the Sausage: In a large skillet, heat olive oil over medium-high heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add garlic and cook for an additional minute until fragrant.
