Ingredients

1 cup dulce de leche

2 cups heavy cream

1 teaspoon vanilla extract

1 tablespoon powdered sugar (optional for added sweetness)

1/4 cup milk (whole or skim)

1 teaspoon gelatin (optional for a firmer texture)

Pinch of salt

Chocolate shavings or caramel drizzle for garnish

Instructions

In a small bowl, combine the gelatin with 2 tablespoons of cold milk and let it bloom for about 5 minutes. If you're not using gelatin, you may skip this step.

In a saucepan, gently heat the remaining milk and then add the bloomed gelatin. Stir until completely dissolved (or skip this step if not using). Remove from heat and allow it to cool slightly.

In a large mixing bowl, whip the heavy cream using an electric mixer until soft peaks begin to form. Add powdered sugar if you prefer a sweeter mousse.

In another bowl, combine the dulce de leche, vanilla extract, and a pinch of salt. Mix until smooth and thoroughly combined.

Gently fold in the whipped cream into the dulce de leche mixture in three parts, ensuring you retain as much air as possible for a fluffy texture.

Once combined, add the cooled milk mixture (or skip if you didn't use gelatin) and fold gently until fully incorporated.

Spoon the mousse into serving cups or bowls and chill in the refrigerator for at least 2 hours or until set.

Before serving, garnish with chocolate shavings or a drizzle of caramel on top.
