1 lb ground beef (80/20 blend)

Salt and pepper to taste

4 slices of American cheese

2 slices of aged cheddar cheese

4 sesame seed burger buns

1 cup lettuce, shredded

1 tomato, sliced

1/2 red onion, thinly sliced

For the Special New York Sauce:

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon Dijon mustard

1 tablespoon white vinegar

1 teaspoon garlic powder

1 teaspoon smoked paprika

Prepare the Sauce: In a bowl, combine the mayonnaise, ketchup, Dijon mustard, white vinegar, garlic powder, and smoked paprika. Mix until smooth and season with salt and pepper to taste. Set aside in the refrigerator to let the flavors meld.

    Shape the Patties: Divide the ground beef into 8 equal portions (about 2 ounces each). Gently shape each portion into a loose ball. Avoid overworking the meat for a tender burger.

      Make the Smash Burgers: Heat a large, flat griddle or cast-iron skillet over medium-high heat. Once hot, place 4 beef balls on the surface, spacing them apart. Using a heavy spatula or a burger press, smash each ball down flat into a disc about 1/2 inch thick. Season with salt and pepper.

        Cook the Patties: Cook for about 2-3 minutes until the edges are brown and crispy. Flip the burgers and immediately place 1 slice of American cheese and 1 slice of aged cheddar on top of each patty. Cook for an additional 2 minutes, allowing the cheese to melt.

          Toast the Buns: While the burgers are cooking, toast the sesame seed burger buns on the griddle for about 1-2 minutes until golden brown.

            Assemble the Burger: Spread a generous amount of Special New York Sauce on the bottom half of each bun. Add the shredded lettuce, then stack 2 cheesy patties on each bun. Top with tomato slices and red onion rings. Finish with the top half of the bun.

              Serve: Plate the burgers with extra sauce on the side for dipping, if desired.
