1 cup dill pickles, diced

1/2 cup red onion, finely chopped

1/2 cup cherry tomatoes, halved

1/2 cup shredded sharp cheddar cheese

1/4 cup fresh dill, chopped

1 cup mayonnaise

2 tbsp apple cider vinegar

1 tbsp Dijon mustard

1 tsp garlic powder

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the rotini according to package instructions until al dente. Drain and rinse under cold water to cool the pasta. Let it drain well.

Prepare the Dressing: In a large mixing bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, and season with salt and pepper. Mix until smooth and well combined.

Combine Ingredients: In the same bowl, add the cooled pasta, diced dill pickles, red onion, cherry tomatoes, shredded cheddar cheese, and fresh dill. Gently toss everything together until the pasta is evenly coated with the dressing.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld together.

Serve: Before serving, give the salad a good stir. Adjust seasoning with salt and pepper, if needed. Enjoy your refreshing dill pickle pasta salad!
