2 pounds russet potatoes, peeled and diced

1 cup heavy cream

1 cup sharp cheddar cheese, grated

1 cup diced cooked ham or bacon (optional)

1/2 cup scallions, chopped

1/2 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup Parmesan cheese, grated

2 tablespoons unsalted butter

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Boil Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook until fork-tender, about 15-20 minutes. Drain and set aside.

      Prepare Cream Mixture: In a medium saucepan, combine heavy cream, garlic powder, onion powder, paprika, salt, and pepper over medium heat. Stir until warmed and integrated, then remove from heat.

        Mix Ingredients: In a large mixing bowl, combine the cooked potatoes, diced ham or bacon (if using), half of the cheddar cheese, scallions, and the cream mixture. Gently fold to combine, ensuring the potatoes are well-coated.

          Transfer to Baking Dish: Spread the potato mixture into a greased 9x13-inch baking dish. Top with the remaining cheddar cheese and Parmesan cheese. Dot the top with small pieces of butter.

            Bake: Place in the oven and bake for 30-35 minutes, or until the top is golden and bubbly.
