8 rice paper wrappers

1 cup cooked salmon, flaked (can be poached or grilled)

1 cup vermicelli noodles, cooked

1 cup shredded carrots

1 cup cucumber, julienned

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 cup shredded lettuce (green leaf or romaine)

1 tablespoon sesame oil

Salt and pepper to taste

Dipping Sauce:

1/4 cup hoisin sauce

1 tablespoon peanut butter

1 teaspoon sriracha (adjust to taste)

1 tablespoon lime juice

Instructions
 

Preheat your oven to 400°F (200°C).

    Prepare a baking sheet by lining it with parchment paper.

      In a large mixing bowl, combine the flaked salmon, cooked vermicelli noodles, shredded carrots, cucumber, mint, cilantro, and shredded lettuce. Drizzle with sesame oil and season with salt and pepper. Gently mix until the ingredients are evenly incorporated.

        Dip one rice paper wrapper into warm water for about 10-15 seconds or until soft. Carefully lay it flat on a clean surface.

          Place 2-3 tablespoons of the salmon and vegetable mixture onto the lower third of the rice paper. Fold the sides over the filling and then roll it up tightly, tucking in the edges as you go. Repeat with the remaining rice paper wrappers and filling.

            Arrange the spring rolls seam-side down on the prepared baking sheet.

              Lightly brush the tops of the spring rolls with sesame oil to encourage browning and crispiness while baking.

                Bake in the preheated oven for 15-20 minutes, or until the spring rolls are golden brown and crispy.

                  While the spring rolls are baking, prepare the dipping sauce by whisking together hoisin sauce, peanut butter, sriracha, and lime juice in a small bowl until smooth and well combined.

                    Once baked, remove the spring rolls from the oven and let them cool slightly before serving.
