1 cup fresh raspberries

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1/2 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/4 cup chocolate (white or dark), melted (for drizzling)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the crust: In a bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture firmly into the bottom of mini muffin tins or silicone molds to create a crust and set aside.

    Make the filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
