1/2 cup unsalted butter (1 stick)

1 cup brown sugar, packed

1 can (20 oz) sliced pineapples in juice, drained (reserve juice)

Maraschino cherries (about 12-15, optional)

1 1/2 cups all-purpose flour

1 cup granulated sugar

2 tsp baking powder

1/2 tsp salt

1/2 cup pineapple juice (from the reserved juice)

1/4 cup milk

2 large eggs

1 tsp vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C).

    In a 9-inch round cake pan, melt the butter over low heat. Once melted, sprinkle the brown sugar evenly over the butter, creating a caramel layer at the bottom.

      Arrange the drained pineapple slices on top of the brown sugar mixture. Place a maraschino cherry in the center of each pineapple slice for a pop of color and flavor.

        In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

          In another bowl, mix the pineapple juice, milk, eggs, and vanilla extract until smooth.

            Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

              Carefully pour the batter over the arranged pineapples in the cake pan.

                Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

                  Once baked, allow the cake to cool in the pan for about 10 minutes.

                    Carefully invert the cake onto a serving platter, allowing the caramelized pineapple and cherries to be on top.
