Ingredients
  

250g spaghetti or linguine

1 cup mixed olives (green and black), pitted and roughly chopped

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup extra virgin olive oil

1/2 cup cherry tomatoes, halved

1/4 cup fresh basil, chopped

Zest and juice of 1 lemon

Salt and pepper to taste

Grated Parmesan cheese (optional for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water and then drain the pasta.

    Prepare the Olive Mixture: In a large skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Incorporate Olives and Tomatoes: Add the chopped olives, halved cherry tomatoes, and red pepper flakes to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes start to soften.

        Combine with Pasta: Add the cooked pasta to the skillet. Toss everything together, adding reserved pasta water a little at a time, until the sauce is creamy and coats the pasta nicely.

          Season and Add Flavor: Remove from heat. Stir in the lemon zest, lemon juice, and fresh basil. Season with salt and pepper to taste.

            Serve: Plate the pasta and sprinkle with grated Parmesan cheese if desired. Garnish with additional basil leaves, a drizzle of olive oil, and more red pepper flakes.
