2 cups shredded cooked chicken (rotisserie chicken works great)

1 can (10.5 oz) cream of chicken soup

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 can (10 oz) diced tomatoes and green chilies (e.g., Ro-tel)

12 corn tortillas, cut into quarters

1 ½ cups shredded cheddar cheese

1 cup diced bell peppers (red and green)

1 small onion, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder

½ teaspoon cumin

Salt and pepper to taste

Fresh cilantro (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Sauce Mixture: In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, sour cream, diced tomatoes with green chilies, garlic powder, onion powder, chili powder, cumin, salt, and pepper. Mix well until smooth.

      Layer the Ingredients: In a greased 9x13 inch baking dish, add a layer of the quartered corn tortillas to cover the bottom. Spread half of the chicken over the tortillas, then half of the sauce mixture. Next, sprinkle one-third of the shredded cheddar cheese, followed by half of the diced bell peppers and onions.

        Repeat the Layers: Repeat the layering process starting with another layer of tortillas, the remaining chicken, the rest of the sauce mixture, another third of the cheese, and the remaining bell peppers and onions.

          Top It Off: Finish with a final layer of tortillas, the remaining cheddar cheese on top, and extra spices or diced veggies if desired.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

              Serve and Garnish: Once baked, remove it from the oven and let it sit for about 5-10 minutes. Serve hot, garnished with fresh cilantro if using.
