6 large eggs

1 cup spinach, chopped

1/2 cup cherry tomatoes, halved

1/2 cup bell peppers, diced (any color)

1/4 cup feta cheese, crumbled

1/4 cup cottage cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional)

Chopped fresh herbs (like parsley or basil) for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or olive oil.

    In a large mixing bowl, crack the eggs and whisk them well until fully blended.

      Stir in the chopped spinach, halved cherry tomatoes, and diced bell peppers to the eggs.

        Add in the crumbled feta cheese, cottage cheese, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Mix everything until well combined.

          Pour the egg mixture evenly into the greased muffin tin, filling each cup about 3/4 full.

            Bake in the preheated oven for 20-25 minutes or until the muffins are set and lightly golden on top. A toothpick inserted in the center should come out clean.

              Once baked, remove the muffin tin from the oven and let it cool for a few minutes before gently removing the muffins.

                Serve warm, garnished with chopped fresh herbs for an extra burst of flavor.
