Delicious Ham and Asparagus Lasagna Recipe for Easy Dinners

Ingredients
  

9 lasagna noodles

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 pound cooked ham, diced

1 pound fresh asparagus, trimmed and cut into 2-inch pieces

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1 cup Parmesan cheese, grated

2 cups marinara sauce

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Lasagna Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.

        Add Ham and Asparagus: Stir in the diced ham and asparagus pieces. Cook for about 5-7 minutes until asparagus is tender but still crisp. Season with salt, pepper, basil, and oregano.

          Prepare Cheese Mixture: In a bowl, combine ricotta cheese, half the mozzarella, and half the Parmesan. Mix well and season with a little salt and pepper.

            Layer the Lasagna: In a 9x13-inch baking dish, spread a thin layer of marinara sauce at the bottom. Place 3 lasagna noodles on top. Spread half of the ricotta cheese mixture over the noodles, followed by half of the ham and asparagus mixture. Add another layer of sauce.

              Repeat Layers: Repeat the layering process, using another 3 noodles, the remaining ricotta mixture, the rest of the ham and asparagus, and more marinara sauce. Top with the final 3 noodles and cover with remaining marinara sauce.

                Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese over the top layer.

                  Bake: Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake for 25 minutes covered, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

                    Cool and Serve: Let the lasagna sit for about 10 minutes before slicing. Garnish with fresh parsley before serving.
