1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) enchilada sauce (plus more for topping)

1 teaspoon cumin

1 teaspoon chili powder

1 cup shredded cheddar cheese (plus more for topping)

8 small corn tortillas

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened—about 3-4 minutes.

    Brown the Meat: Add the ground beef to the skillet. Season with cumin, chili powder, salt, and pepper. Cook until the beef is browned and cooked through, breaking it up with a spoon—around 5-7 minutes.

      Mix in Sauce & Cheese: Stir in the enchilada sauce and 1 cup of shredded cheese into the beef mixture. Cook for an additional 2-3 minutes until heated through and the cheese is melted.

        Prepare Tortillas: Warm the corn tortillas on a dry skillet for about 30 seconds on each side or until pliable.

          Fill & Roll: Take a tortilla and spoon about 2 tablespoons of the beef mixture onto the center. Roll it up tightly and place it seam-side down in a greased baking dish. Repeat with remaining tortillas.

            Top with Sauce & Cheese: Pour additional enchilada sauce over the rolled enchiladas and sprinkle with extra cheese on top.

              Bake: Preheat the oven to 375°F (190°C) and bake for about 10 minutes, or until the cheese is bubbly and golden.
