2 large boneless, skinless chicken breasts

1/2 cup chipotle ranch dressing (store-bought or homemade)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

4 large flour tortillas

1 cup cooked brown rice

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup shredded cheddar cheese

1 avocado, sliced

1 cup shredded lettuce

1/2 cup diced tomatoes

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken breasts, 1/3 cup of the chipotle ranch dressing, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Mix well to coat the chicken evenly. Cover and refrigerate for at least 30 minutes to let the flavors infuse.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, remove the chicken from the marinade and grill for about 7-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. Remove from the grill and let rest for 5 minutes.

      Prepare the Burrito Filling: While the chicken rests, prepare the burrito fillings. In a large bowl, mix the cooked brown rice, black beans, corn, and half of the remaining chipotle ranch dressing. Toss gently until combined.

        Slice the Chicken: After the chicken has rested, slice it into strips.

          Assemble the Burritos: Lay a tortilla flat on a clean surface. Place a scoop of the rice and bean mixture in the center, followed by some sliced chicken, shredded cheddar cheese, avocado slices, shredded lettuce, and diced tomatoes. Drizzle with additional chipotle ranch dressing, if desired.

            Wrap the Burrito: Fold the sides of the tortilla inward, then roll it tightly from the bottom up to encase all the fillings. Repeat with the remaining tortillas.

              Optional – Toast the Burritos: If you prefer a crispy exterior, return the assembled burritos to the grill pan over medium heat for about 2-3 minutes on each side, until golden brown and crispy.

                Serve: Slice the burritos in half, garnish with fresh cilantro, and serve with lime wedges on the side.
