Ingredients

For the Cake:

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

3 large eggs

1 cup granulated sugar

1 teaspoon vanilla extract

1/4 cup milk

2 tablespoons unsalted butter, melted

For the Filling:

1 cup fresh blueberries (or frozen, thawed)

1/4 cup blueberry jam

1/2 teaspoon lemon juice

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (as needed for consistency)

Instructions

Prepare the Cake Batter:

    - Preheat the oven to 375°F (190°C). Line a 15x10 inch jelly roll pan with parchment paper, allowing some overhang for easy removal.

      - In a bowl, whisk together the flour, baking powder, and salt. Set aside.

        - In a separate large bowl, beat the eggs and granulated sugar on high speed for about 5 minutes until thick and pale. Stir in the vanilla extract.

          - Gradually fold the dry ingredients into the egg mixture, alternating with the milk and melted butter. Mix until combined, being careful not to overmix.

            Bake the Cake:

              - Pour the batter into the prepared pan and spread it out evenly. Bake for 12-15 minutes or until the cake is lightly golden and springs back when touched.

                - While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar. Once the cake is done, immediately invert it onto the towel and peel off the parchment paper. Roll the cake up with the towel inside, starting from the short end. Let it cool completely in this rolled form.

                  Make the Filling:

                    - In a bowl, gently mash the blueberries with a fork. Stir in the blueberry jam and lemon juice until well combined.

                      Prepare the Cream Cheese Frosting:

                        - In a mixing bowl, beat the softened cream cheese and butter together until creamy. Gradually add the powdered sugar and vanilla extract. If necessary, add a little milk to reach desired spreading consistency.

                          Assemble the Roll Cake:

                            - Once the cake has cooled completely, carefully unroll it. Spread the blueberry filling evenly over the surface of the cake, leaving about 1 inch around the edges.

                              - Roll the cake back up without the towel and then place it seam side down. Wrap in plastic wrap and refrigerate for at least 30 minutes to set.

                                Frost the Cake:

                                  - Once chilled, unwrap the cake and transfer it to a serving platter. Spread the cream cheese frosting over the top and sides of the roll cake.

                                    Serve:

                                      - Slice the roll cake into pieces and enjoy! Garnish with fresh blueberries if desired.
