Ingredients
  

2 cups all-purpose flour

1 ½ tsp baking powder

½ tsp baking soda

1 tsp salt

1 cup buttermilk

½ cup olive oil

1 large egg

1 cup marinara sauce (plus extra for serving)

1 ½ cups shredded mozzarella cheese

1 cup pepperoni slices (or your favorite toppings)

½ cup grated parmesan cheese

1 tsp Italian seasoning

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with cooking spray or olive oil.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the buttermilk, olive oil, and egg until smooth.

        Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

          Prepare the Muffin Tin: Spoon a small amount of the batter (about a tablespoon) into each muffin cup to create the base layer.

            Add the Filling: Spoon about a tablespoon of marinara sauce into each cup, followed by a layer of mozzarella cheese, a few slices of pepperoni, and a sprinkling of parmesan cheese and Italian seasoning.

              Top with Batter: Add another tablespoon of batter over the top of the filling in each cup, ensuring the fillings are well-covered.

                Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                  Cool & Serve: Allow the pizza cupcakes to cool in the tin for 5 minutes before carefully removing them. Serve warm with additional marinara sauce for dipping and garnish with fresh basil leaves if desired.
