Ingredients
  

For the Cupcake Base:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon garlic powder

1 cup buttermilk

1/2 cup olive oil

2 large eggs

1 teaspoon Italian seasoning

For the Filling:

1 cup marinara sauce (or pizza sauce)

1 1/2 cups shredded mozzarella cheese

1 cup diced pepperoni (or preferred toppings)

1/2 cup diced bell peppers (optional)

1/4 cup grated Parmesan cheese

For Topping:

Fresh basil leaves, for garnish

Extra marinara sauce for dipping

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C) and grease a standard muffin tin generously with cooking spray or oil.

    Make the Batter:

      - In a large bowl, whisk together the flour, baking powder, salt, garlic powder, and Italian seasoning.

        - In another bowl, mix the buttermilk, olive oil, and eggs until well combined.

          - Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.

            Fill the Muffin Tin:

              - Spoon a small amount of the batter (about a tablespoon) into the bottom of each muffin cup to form a base.

                - Add a spoonful of marinara sauce into each cup, then sprinkle a layer of mozzarella cheese, followed by diced pepperoni and bell peppers if using. Repeat this layering until you reach the top of the muffin cups, finishing with a final layer of batter to seal it in.

                  Bake:

                    - Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out mostly clean (it may have a bit of cheese on it).

                      Cool and Serve:

                        - Remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool slightly.

                          - Once cooled, garnish with fresh basil leaves and serve warm with extra marinara sauce on the side for dipping.
