Ingredients

4 salmon fillets (6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Lemon wedges, for serving

Instructions

Prepare the Salmon: Season the salmon fillets generously with salt and pepper on both sides.

Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crispy. Carefully flip the salmon and cook for another 3-4 minutes until cooked through. Remove the salmon from the skillet and set aside.

Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium, add the butter, and let it melt. Add minced garlic and sauté for about 1-2 minutes until fragrant.

Add the Vegetables: Toss in the cherry tomatoes and cook for another 2 minutes until they begin to soften. Next, add the fresh spinach and stir until wilted.

Create the Creamy Sauce: Pour in the heavy cream and stir well. Sprinkle in the Italian seasoning and stir in the Parmesan cheese until melted and the sauce thickens, about 2-3 minutes.

Combine: Return the salmon to the skillet, spooning the sauce over the fillets. Let it simmer for another minute to heat through.

Serve: Garnish with fresh basil leaves and serve with lemon wedges on the side for brightness.
