Cuban White Bean Soup Recipe

2 cups canned white beans (such as cannellini or great northern), drained and rinsed

2 tablespoons olive oil

1 large onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 carrot, diced

1 celery stalk, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 bay leaf

4 cups vegetable broth

1 can (14.5 oz) diced tomatoes, with juice

1 cup kale or baby spinach, chopped

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent.

    Add the minced garlic, diced red bell pepper, carrot, and celery to the pot. Cook for another 5-7 minutes, stirring occasionally, until the vegetables soften.

      Stir in the ground cumin, smoked paprika, and bay leaf. Cook for 1-2 minutes until the spices are fragrant.

        Add the white beans, vegetable broth, and diced tomatoes (with their juice) into the pot. Bring to a boil, then reduce heat to a simmer.

          Let the soup simmer for about 20-25 minutes to allow the flavors to meld together.

            Remove the bay leaf and stir in the chopped kale or spinach. Cook for another 5 minutes until the greens are wilted.

              Season the soup with salt and pepper to taste before removing from heat.

                Serve the soup hot, garnished with fresh cilantro and a wedge of lime on the side for an extra zing.
