8 slices of sourdough bread

6 oz (170g) ham, thinly sliced

6 oz (170g) Gruyère cheese, grated

2 tablespoons Dijon mustard

4 tablespoons unsalted butter, softened

1/2 cup milk

1/4 cup all-purpose flour

1/4 teaspoon nutmeg

Salt and pepper, to taste

2 tablespoons freshly chopped chives (for garnish)

Make the Béchamel: In a medium saucepan over medium heat, melt 2 tablespoons of butter. Once melted, whisk in the flour and cook for about 2 minutes until golden, forming a roux.

    Gradually whisk in the milk, stirring constantly to avoid lumps. Continue to cook until the sauce thickens, about 5-7 minutes.

      Stir in the nutmeg, and season with salt and pepper. Remove from heat and set aside.

        Prepare the Bread: Preheat your oven to 400°F (200°C). Lay out four slices of sourdough bread. Spread Dijon mustard evenly over each slice.
