1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 can (14.5 ounces) diced tomatoes, undrained

1 can (15 ounces) cannellini beans, drained and rinsed

2 cups fresh spinach (or kale)

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (optional, for added heat)

1 package (9 ounces) refrigerated cheese tortellini

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley or basil for garnish (optional)

Instructions
 

In a skillet over medium heat, heat the olive oil. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and sausage to the skillet and cook until the sausage is browned and crumbled, about 5-7 minutes. Drain any excess grease.

      Transfer the cooked sausage and onion mixture to the crockpot.

        Pour in the chicken or vegetable broth, diced tomatoes (with their juices), and cannellini beans. Stir in the Italian seasoning and red pepper flakes, if using.

          Cover and cook on low for 4-6 hours or on high for 2-3 hours.

            About 30 minutes before serving, stir in the cheese tortellini and fresh spinach. Adjust cooking time as needed until the tortellini is tender and the spinach is wilted.

              Season the soup with salt and pepper to taste.

                Serve hot, garnished with fresh parsley or basil if desired.
