3-4 lbs pork shoulder (butt)

2 tablespoons smoked paprika

1 tablespoon chipotle powder

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cumin

2 teaspoons salt

1 teaspoon black pepper

1 cup low-sodium chicken broth

1/2 cup honey

1/4 cup apple cider vinegar

1 tablespoon Worcestershire sauce (non-alcoholic)

1 medium onion, sliced

3 cloves garlic, minced

Prepare the Pork: Pat the pork shoulder dry with paper towels and trim any excess fat.

    Make the Spice Rub: In a small bowl, mix together smoked paprika, chipotle powder, garlic powder, onion powder, cumin, salt, and black pepper. Rub this spice mixture all over the pork shoulder, covering all sides evenly.

      Layer the Ingredients: Place sliced onions and minced garlic at the bottom of the crockpot. Pour the chicken broth, honey, apple cider vinegar, and Worcestershire sauce over the onions.

        Add the Pork: Carefully place the seasoned pork shoulder on top of the ingredients in the crockpot.

          Slow Cooking: Cover the crockpot and set it to cook on low for 8-10 hours or on high for 4-6 hours, until the pork is tender and easily pulls apart with a fork.

            Shred the Pork: Once cooked, remove the pork from the crockpot and let it rest for a few minutes. Using two forks, shred the pork into bite-sized pieces.

              Combine with Sauce: Return the shredded pork to the crockpot and stir it in the sauce to coat evenly. Let it sit for an additional 30 minutes on warm.

                Serve: Serve the pulled pork on hamburger buns with a scoop of coleslaw if desired.
