Ingredients
  

2 lbs beef flank steak, thinly sliced

1 large onion, sliced

1 large green bell pepper, sliced

1 large red bell pepper, sliced

4 cloves garlic, minced

1 cup beef broth

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

8 hoagie rolls

8 slices provolone cheese

Olive oil for drizzling

Instructions
 

Prepare the Beef: In a large bowl, season the thinly sliced flank steak with salt, pepper, and Italian seasoning; toss to coat.

    Layer the Vegetables: Add the sliced onions, green bell pepper, red bell pepper, and minced garlic to the bottom of the crockpot.

      Add the Beef: Lay the seasoned flank steak on top of the vegetables evenly.

        Mix the Broth: In a separate bowl, whisk together the beef broth, soy sauce, and Worcestershire sauce. Pour this mixture evenly over the beef in the crockpot.

          Cook: Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.

            Serve: Once cooked, shred the beef slightly with a fork and mix it with the veggies and broth.

              Melt the Cheese: Place a portion of the beef and vegetable mixture into each hoagie roll, and top with 1 slice of provolone cheese.

                Melt the Cheese (Optional): If desired, place the filled rolls under a broiler for 1-2 minutes to melt the cheese further. Drizzle with a little olive oil before serving.
