4 boneless, skinless chicken breasts

1 cup wild rice blend (mix of wild and brown rice)

1 medium onion, diced

3 cloves garlic, minced

2 cups low-sodium chicken broth

1/4 cup unsalted butter, melted

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by rinsing the wild rice under cold water until the water runs clear. This helps to remove excess starch.

    In the bottom of your crockpot, layer the rinsed wild rice evenly.

      In a mixing bowl, combine the melted butter, dried thyme, rosemary, oregano, paprika, minced garlic, salt, and pepper. Mix well to create a seasoned butter mixture.

        Place the chicken breasts on top of the wild rice in the crockpot. Pour the seasoned butter mixture over the chicken, ensuring it’s well coated.

          Add the diced onion on top of the chicken and then pour the chicken broth over all the ingredients in the crockpot.

            Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and the wild rice is cooked through.

              Once cooked, shred the chicken using two forks and stir everything together in the crockpot to combine the flavors. Adjust seasoning with salt and pepper if needed.

                Serve hot, garnished with freshly chopped parsley for a pop of color and freshness.
