Ingredients
  

1 pound boneless, skinless chicken breasts

1 medium onion, diced

3 cloves garlic, minced

3 cups chicken broth

1 can (14.5 oz) diced tomatoes, undrained

1 cup heavy cream

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

1 cup grated Parmesan cheese

1 cup uncooked pasta (such as rotini or fusilli)

2 cups fresh spinach, chopped

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Place the chicken breasts at the bottom of the slow cooker.

    Add the diced onion and minced garlic on top of the chicken.

      Pour in the chicken broth and undrained diced tomatoes.

        Sprinkle the Italian seasoning and red pepper flakes (if using) over the contents, then season with salt and pepper.

          Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.

            Remove the chicken from the slow cooker, shred it with two forks, and return it to the pot.

              Stir in the heavy cream, grated Parmesan cheese, and uncooked pasta.

                Cover and cook on high for an additional 30 minutes or until the pasta is tender.

                  Just before serving, stir in the chopped fresh spinach until wilted.

                    Taste and adjust seasoning if necessary. Garnish with fresh basil, if desired, before serving.
